If you are in a spicy region like Yunnan, you will have two bowls, a plate, and some chopsticks. #1 is your dipping sauce, it can be very spicy. #2 is your bowl that will be used to hold items before you dip them. People may put food items in this bowl as a friendly gesture. Say thank you. Later, this bowl can be used for soup. #3 is the lazy susan. It is best if you let the host turn it. If you ever turn it, be sure that no one is taking anything from any of the dishes. General rule: Let someone else do this, as there is a pace at which it gets turned, and is turned by the host to target certain food items to certain people at certain times. #4 is where the hot pot (or main dish) will be. You can use your chopsticks to take something out of the middle (a potato, tofu, meat) and place it in bowl #2 to let it cool off, or directly into bowl #1.
Just as you begin to eat, you move bowl #2 from the plate to the table. The plate below #2 is where you will put bones, hot peppers, or anything else that you don’t want to eat.
